I'm thrilled to share with you my latest baking creation: a scrumptious Blueberry Lemon Yogurt Loaf. This delightful treat is perfect for any occasion, whether it's a cozy family breakfast, a tea-time snack, or a delicious dessert to share with friends.

Ingredients:

  • 1 1/2 cups all-purpose flour

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1 cup plain Greek yogurt

  • 1 cup sugar

  • 3 large eggs

  • Zest of 1 lemon

  • 1/2 tsp vanilla extract

  • 1/2 cup vegetable oil

  • 1 1/2 cups fresh blueberries

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan and line with parchment paper.

  2. Mix dry ingredients: In a bowl, whisk together the flour, baking powder, and salt.

  3. Combine wet ingredients: In another bowl, whisk together the yogurt, sugar, eggs, lemon zest, and vanilla extract until smooth.

  4. Blend: Gradually mix the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.

  5. Add oil: Fold in the vegetable oil until fully incorporated.

  6. Fold in blueberries: Gently fold in the blueberries, ensuring they are evenly distributed throughout the batter.

  7. Bake: Pour the batter into the prepared loaf pan. Bake for about 50-55 minutes, or until a toothpick inserted into the center comes out clean.

  8. Cool: Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
